TASTING NOTES
The Ladoix designation was created in July 1937 for wines made from grapes grown in the commune of Ladoix-Serrigny, located at the northern end of the Côte de Beaune sub-region in Burgundy. It is located north of Beaune, under the eastern slopes of the Corton hill. This is the place where the only Grand Cru red wines of the Côte de Beaune are produced. The grapes used to produce this wine originate from Les Carrières, a vineyard oriented from east to south-east. Located near Corton and Corton Charlemagne, on gravelly soil, this vineyard benefits from a special microclimate. Its location, at the base of an old quarry, allows the warmth of the sun to be preserved in the rock, favouring exceptional ripening. The grapes are harvested by hand, placed in boxes and transported to the cellar. Some of the grapes are destemmed and left to ferment for 8-10 days. This method produces elegant and delicate wines. After fermentation, the wine is transferred to barrels to complete the vinification process, which lasts between 12 and 18 months. Racking is carried out to separate the sediment that forms during the process, before bottling. Before bottling, the wine is filtered if necessary. Les Carrières is an elegant red wine with notes of red fruit. It has a full-bodied palate, a soft and complex structure. The nose presents rich aromas and a slight unctuousness. Notes of blackberry, jammy cherry, purple plum, strawberry blossom and violet emerge. Sweet spices, vanilla and a touch of sweet blond tobacco are also perceived. The taste is fresh, mineral, fruity and balanced, with a creamy texture and slight acidity. The wine displays a range of appealing flavors, including blackberry, blueberry, cherry, raspberry, violet, cornflower, chocolate, and vanilla. It also exhibits subtle hints of lilac, liquorice, and a delicate saline minerality on the finish. Overall, this is a fascinating and refined wine.
