Antoine Rousseau and Barbe Deslandes created the Hospital de Sainte-Trinité in 1645, which was later affiliated with the Hospices de Beaune during the French Revolution. This wine originates from three premier cru plots: Les Cent Vignes (1.06ha), planted between 1944 and 1958, is the main one, Montrevenots (0.71ha), located near Pommard, represents one third of the blend with old vines dating back to before 1966, while Les Mignottes (0.42ha) completes the cuvée. The 2019 Cuvée Rousseau-Deslandes was skilfully vinified by Ludivine Griveau, charismatic oenologist at the Hospices de Beaune. The grapes were harvested by hand at perfect ripeness and subjected to rigorous selection. Vinification followed traditional practices, with maceration lasting 17-19 days, followed by periodic punching-down and pumping-over. The wine was aged for 18 months in new barriques before being delivered to Edouard Delaunay. Deep dark red in colour in the glass, it has an elegant, powerful and complex bouquet that combines fruity notes of wild strawberry, fruit coulis, raspberry and cherry with more spicy notes from the barrique ageing, such as beeswax, peat, charcoal, cedar and chocolate. The palate is broad and ripe, with some sweetness and notes of chocolate, bitter orange, Szechuan pepper and mint. The wine has a wonderful structure with exceptional balance and delicious acidity. It is a very complex and well-balanced wine that can be enjoyed from a young age, but has considerable ageing potential.
