TASTING NOTES
Le Vallon Sancerre 2021 from Domaine de Terres Blanches is produced from a single vineyard of almost 3 hectares called Le Vallon, with vines about 25 years old. The soil is mainly limestone, composed of caillottes, the typical hard limestone of the Sancerre region, together with Terres Blanches. Harvesting is done manually, choosing ripe grapes with care. After a gentle pressing, fermentation takes place in temperature-controlled stainless steel vats for about twenty days. The wine is then matured in steel vats for 10 months on its lees, to give it roundness and finesse before bottling.
