Abbotts & Delaunay winery was founded in 2005 in the heart of Languedoc, southern France, from the encounter between Australian winemaker Nerida Abbott and Laurent Delaunay – a fifth-generation Burgundian oenologist – whose passion and expertise are rooted in both Australian and Burgundian winemaking traditions. The name celebrates this unique partnership and embodies a shared vision: to unlock the potential of Languedoc's diverse terroirs, from Mediterranean clay-limestone soils to high-elevation plots influenced by cooling winds. Today, the estate cultivates carefully selected vineyards that impart elegance, freshness, and distinctive minerality to its wines, establishing Abbotts & Delaunay as a reference for Languedoc enthusiasts worldwide.

Now led by Jeanne Delaunay, Laurent's daughter and sixth-generation oenologist, Abbotts & Delaunay combines family heritage with a contemporary, sustainable approach to viticulture. Vineyard management focuses on rigorous parcel selection, prioritising biodiversity, living soils, and organic practices. The Languedoc Blanc and Languedoc Rouge express distinct terroir characters: the Blanc, blending Grenache Blanc, Vermentino, Roussanne, and Marsanne, offers mineral freshness with citrus, pear, and white spice notes; the Rouge, from Syrah, Grenache, and Mourvèdre, delivers structured fruit, garrigue aromas, and refined tannins. Each parcel receives artisanal vinification – Champagne-style pneumatic presses, spontaneous fermentations, French barrique maturation – preserving Languedoc's authentic identity and telling a story of terroir, time, and people in every bottle.
