Selezione Cimarelli Verdicchio dei Castelli di Jesi Riserva Classico DOCG 2022 is a structured and dry white wine made exclusively from 100% Verdicchio grapes sourced from the historic Coste vineyard in Staffolo. The vines are double Guyot trained and situated at about 380-400 metres above sea level on loose, calcareous-clay soils, which impart mineral finesse and structure to the wine. Harvested by hand in early September, grapes are meticulously selected to ensure superior concentration and quality. Vinification is carried out naturally in stainless steel tanks, with gentle pressing of whole grapes and controlled temperature fermentation. The wine then ages "sur lies" for approximately nine months in steel and cement tanks, developing complexity and creaminess, followed by at least 18 months in bottle, providing elegance and a long, persistent finish. In the glass, the wine shows a bright, luminous straw-yellow colour. The bouquet is elegant and refined, delivering aromas of green apple, fresh citrus, almond, and white flowers, accompanied by pronounced minerality and subtle yeasty notes from extended lees ageing. On the palate, it is vibrant, full, and harmonious, with a fine structure balancing softness and acidic tension. The finish is long and persistent, showcasing the authentic character of the Castelli di Jesi terroir. Ideal paired with seafood starters, grilled fish, fresh cheeses, and white meats, this wine embodies the excellence of Marche's winemaking tradition.
