Roberto Garbarino's Moscato d'Asti DOCG Hiku 2025 is a frizzante aromatic wine that embodies the purity of Moscato Bianco from the hills of Neviglie, in Piedmont, produced in small quantities (around 7,000 bottles) by a family-run estate that avoids chemical fertilisers and welcomes cellar visits by appointment. The 2025 vintage in Neviglie proved balanced, with a mild winter, a regular spring rich in water reserves, and a warm summer without excessive water stress thanks to the calcareous-clay soils that retained moisture. Nocturnal temperature swings preserved the lively acidity and crisp aromas of the Moscato Bianco from 45-year-old vines on south-facing hills at 500 metres, with a limited yield of 55 hl/ha, avoiding cloying sweetness through low-temperature autoclave fermentation and an alcohol level of 5.5%. On the eye, it shows a pale straw yellow with greenish highlights and fine, persistent perlage. On the nose, floral notes of hawthorn, jasmine, and sage explode, with citrus hints enhanced by the optimal 2025 ripening. In the mouth, it is balanced sweet, fresh, and persistent, with acidity that makes it dynamic and not heavy. Ideal as an aperitif, with fresh fruit or desserts; try bold pairings: With soft Piedmontese raw salami: the bubbles cleanse the fattiness, while the sweetness balances the saltiness. With classic panettone or single-portion panettine (raisins, candied peel, cream): floral and citrus aromas meld with the leavened dough, acidity lightens the mascarpone.
