These zones, with their clay and morainic soils, exalt Pinot Bianco and Pinot Nero, gifting the wine great acidity, freshness, and elegant minerality thanks to an alpine microclimate of sunny days and nocturnal thermal amplitudes, making Alto Adige an excellence for metodo classico rosè sparkling wines. Crafted from Pinot Bianco and Pinot Nero, it involves white, rosè, and red vinifications from at least two vintages, creating a unique assemblage in the Alto Adige Metodo Classico: bottle fermentation, 24-30 months on lees, and up to 3 years post-disgorgement ageing for superior structure and fine persistent mousse.
